Banana Chocolate Chip Waffles - Dairy & Gluten Free

These waffles hit that sweet spot between wholesome and indulgent, with all the familiar flavor of banana bread in waffle form. They’re golden and on the outside, soft and tender on the inside, with just the right touch of natural sweetness from ripe bananas. The chocolate chips add just enough richness to enhance the banana flavor without overwhelming it.

Ingredients
  

Dry Ingredients

  • 1 cup almond flour
  • 1 cup coconut flour
  • 2 Tbsp flaxseed meal
  • 2 tsp baking soda
  • 1 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup mini chocolate chips (Enjoy Life is my preferred brand as they are dairy and allergen free)

Wet Ingredients

  • 1 can unsweetened coconut milk, full fat
  • 6 eggs
  • 2 very ripe bananas, mashed
  • 2 tsp vanilla extract
  • 2 Tbsp honey

Instructions
 

  • In a small bowl, combine all the dry ingredients (except the chocolate chips). Set aside.
  • In a medium to large mixing bowl, whisk the eggs for about 1 minute, until well combined and slightly bubbly.
  • Add the remaining wet ingredients to the eggs and whisk until fully incorporated.
  • Gradually add the dry mixture to the wet ingredients, whisking until smooth and well combined.
  • Stir in the mini chocolate chips until evenly distributed throughout the batter.
  • Let the batter rest while your waffle iron preheats. Set it to medium heat.
  • Once the waffle iron is ready, spoon batter into each section rather than placing it all in the center—this helps it spread more evenly.
  • Cook for about 2 minutes on each side if you're using a flip-style waffle maker, or about 4 minutes in a standard model. Adjust the cook time as needed, since every waffle maker is a little different
  • Top with butter, maple syrup, banana slices, whipped cream—or whatever you’re craving! This recipe makes about 6 round waffles
