Do you love banana bread? How about chocolate chip banana bread? These waffles hit that sweet spot between wholesome and indulgent, with all the familiar flavor of banana bread in waffle form. They’re golden and on the outside, soft and tender on the inside, with just the right touch of natural sweetness from ripe bananas. The chocolate chips add just enough richness to enhance the banana flavor without overwhelming it.
Made with paleo-friendly ingredients like flax, coconut flour, almond flour, eggs, and coconut milk, they’re a great option whether you’re following a specific diet or simply craving a feel-good breakfast the whole family can enjoy. And they’re not just for breakfast—we love pulling these out for “breakfast for dinner” nights, too!

Start by combining the dry ingredients (except the chocolate chips) in a small bowl. Once they’re mixed, set the bowl aside.

In a large bowl, whisk the eggs until well blended and slightly bubbly. Add the remaining wet ingredients and whisk again until everything is fully incorporated.
Gradually whisk the dry ingredients into the wet mixture—I like to add about a third at a time to keep the batter smooth and clump-free. Once it’s fully combined, fold in the mini chocolate chips. For chocolate chips, I use Enjoy Life Semi-sweet Mini Chips. These are dairy free, but they do have cane sugar. So if you are following a paleo diet, feel free to omit these from the recipe. The waffles are still delicious!
Kid Tip: Let little hands mash the bananas or whisk the batter. It might get messy, but it makes the process more fun—and they’ll be more excited to eat something they helped create.

Let the batter rest while you preheat the waffle iron. Since coconut flour absorbs moisture as it sits, the batter will naturally thicken a bit. I used to have a traditional non-stick waffle iron, but after ditching anything with toxic PFOA/PFAS coatings, I switched to a ceramic waffle maker from and haven’t looked back. It cleans easily and has lasted me nearly ten years!
Once the waffle iron is heated, spoon a generous amount of batter into each section. Because the batter is thicker than traditional waffle batter, spreading it evenly helps it cook properly—don’t just plop it in the center and hope for the best.
Close the lid and cook for about 2 minutes per side if you’re using a flip-style waffle maker. If not, cook for 3–4 minutes, or until the waffles are golden brown. Every waffle maker is a little different, so feel free to adjust the cooking time or temperature after the first couple waffles if needed

Transfer the cooked waffles to a warm spot while you finish the batch. I like to keep mine in the oven set at 175°F, tucked into a baking dish. You could also use a warming mat if you have one—this is its moment to shine!
When you’re ready to serve, top with butter, maple syrup, sliced bananas, a sprinkle of chocolate chips, whipped cream, or even candied walnuts if you’re feeling fancy. Dig in and enjoy!

- 1 cup coconut flour
- 2 Tbsp flaxseed meal
- 2 tsp baking soda
- 1 tsp sea salt
- 1/2 tsp ground cinnamon
- 1/4 cup mini chocolate chips (Enjoy Life is my preferred brand as they are dairy and allergen free)
Wet Ingredients
- 1 can unsweetened coconut milk, full fat
- 6 eggs
- 2 very ripe bananas, mashed
- 2 tsp vanilla extract
- 2 Tbsp honey
Instructions
- In a small bowl, combine all the dry ingredients (except the chocolate chips). Set aside.
- In a medium to large mixing bowl, whisk the eggs for about 1 minute, until well combined and slightly bubbly.
- Add the remaining wet ingredients to the eggs and whisk until fully incorporated.
- Gradually add the dry mixture to the wet ingredients, whisking until smooth and well combined.
- Stir in the mini chocolate chips until evenly distributed throughout the batter.
- Let the batter rest while your waffle iron preheats. Set it to medium heat.
- Once the waffle iron is ready, spoon batter into each section rather than placing it all in the center—this helps it spread more evenly.
- Cook for about 2 minutes on each side if you’re using a flip-style waffle maker, or about 4 minutes in a standard model. Adjust the cook time as needed, since every waffle maker is a little different
- Top with butter, maple syrup, banana slices, whipped cream—or whatever you’re craving! This recipe makes about 6 round waffles
